Pumpkin Spice White Hot Chocolate

Along with 99% of the American population, I develop a strong affinity for all things pumpkin come fall.  Surprisingly, I have yet to make it to a coffee shop for a Pumpkin Spice Latte...however, we have whipped up a delicious Pumpkin Spice White Hot Chocolate using this recipe from Fab Fatale. It tastes like pumpkin pie in a cup!
Pumpkin Spice White Hot Chocolate

Servings: 4 - 6

Ingredients
  • 4-5 cups whole milk
  • 10 ounces white chocolate, chopped
  • 4 teaspoons cocoa powder
  • 3/4 teaspoon vanilla extract
  • 1 cup pure pumpkin puree
  • 1/2 teaspoon pumpkin spice
  • whipped cream
Directions

In a large saucepan, combine 2 cups of milk, white chocolate, and cocoa powder. Cook over medium heat, whisking periodically, until the chocolate is melted and the mixture is well combined. Whisk in the pumpkin puree and pumpkin spice. 
Add the remaining milk, 1 cup at a time, until the desired consistency and sweetness is reached.
If desired, serve topped with whipped cream and a sprinkling of cinnamon. 
We have made this so many times recently, my husband now has this recipe memorized, lol! (Do you like our mug? - the image on the cup is slowly revealed when you add a hot beverage!) We topped it with whipped cream the first few times we made it, but it can end up a touch too rich this way. Either way, it's a delicious simple dessert that helps satisfy those fall pumpkin cravings.
